Diabetic Pizza Frittata
1/2 cup fresh cherry tomatoes, halved
2 garlic cloves, minced
1 tsp dried oregano
1 pinch of red pepper flakes
Salt and letter to taste
2 tbsp olive oil
4 whole eggs
4 egg whites
1/4 cup of Parmesan cheese
1/2 cup grated low fat mozzarella cheese
2 Tbsp fresh chopped basil
*Preheat oven to 350 degree F. In a small skillet, salute tomatoes, garlic, oregano, red pepper flakes, salt and pepper in oil for 3 minutes under low heat.
*In a separate bowl, beat eggs and egg whites, and add Parmesan and mozzarella cheese. Pour Egg mixture into the pan and stir to combine ingredients. Cook without stirring, for 4 minutes. Add basil
*Transfer the skillet to the oven and bake until set, about 10-12 minutes.
